Crafted especially for David, our co-founder and resident Embers rockstar! Named after The Erebus, an Old Provo Days watering hole, and David’s first stop when he first arrived in Provo in 1981. A zesty mix of smashed cucumber, lavendeer and ginger beer that will keep you rocking til’ dawn.

Created in the 1980’s by a British barman, and known originally as a mere springtime Gin specialty, the Bramble cocktail has skyrocketed to fame thanks to its adaptable nature. Traditionally, this bad boy packs a punch with currant liqueur as the sweetener, but we’ve concocted a version that adds a berrylicious compote to the mix, making it an irresistible addition to our Embers menu. The kicker? This drink is like a chameleon, gracefully pairing with all the big names in the spirit world – think tequila, gin, whiskey, vodka and rum. Cheers to that!

According to a global cocktail study, the Margarita has taken the cocktail scene by storm and emerged as the world’s favourite cocktail, destined to be a top menu item. However, our version of this classic is a game changer. We’re incorporating Aperol to give it a unique twist. The addition of Aperol enhances The Margarita with a citrusy tang, without overpowering the alcohol content – making for a truly unforgettable drink.

This fabulous concoction of gin, lemon, sugar and champagne has been around since WW1, and every sip is like a step back in time. The original was mixed with Cognac, but over time it’s been tweaked and twisted in countless ways. At Embers, we’re putting our touch on this classic with Butterfly Pea Flower Infused Gin, White Vermouth and Eucalyptus Syrup that’s packed with herbaceous goodness. Get ready to experience the 75 like never before!
Gaucho
Cachaca / Luxardo / Pineapple Simple Syrup / Lime Juice / House Bitters
Saddle up for an adventure with our spin on the Gaucho – a drink inspired by the Latin American Gauchos, sure to take you for a ride. This bold and flavourful cocktail is made with Cachaca, the godfather of spirits in most parts of South America. It boasts a uniquely earthy yet sweet flavour profile. Cachaca is to South America what Bourbon is the USA, Rum to the Caribbean and Tequila to Mexico – you get the idea. Our house bitters add a swift kick while the Luxardo liqueur balances with the sweetness of the pineapple. It all combines for a unique blend that’s bold, sweet and earthy – giddy up!

This flawless formula gives the Old Fashioned its iconic status, with every mixologist boasting their own variation. And guess what? This classic is having a glorious revival in the world of craft cocktails. Why, you ask? Because the world is still head-over-heels for this old school fave. We of course have our own twist, stinging it in our barrels and enhancing the flavour and theatrics with some smoke – we’ve gotta have the smoke, right? Get ready to sip on pure old fashioned bliss.
For more than a century, the Manhattan cocktail has been a beloved classic worldwide. Like the Old Fashioned, it combines spirit, sugar, and bitters – but with the added complexity of sweet vermouth’s flavour and aroma. The enduring popularity of this cocktail is due to its perfect balance. At Embers, we’ve put a twist on it. While staying true to the original composition, we’ve introduced Barolo Chinato in place of the OG Sweet Vermouth and Carpano Antica to enhance the flavours. In a playful nod to tradition, we garnish with a cherry and orange peel spritz.
The Dude
Vanilla Vodka / Coffee Liqueur / Coffee Beans / Raw El Hanout Whipped Cream
Contrary to its name, the White Russian actually has Belgian origins. A Belgian barman at Hotel Metropole in Brussels invented this drink in 1954. However, it wasn’t until 1998 with the release of The Big Lebowski that this cocktail gained widespread recognition (Thanks Mr Bridges!). We pay homage to both the original cocktail and the classic film with our own version – The Dude. Layered with chilled spirits at the bottom and whipped cream on top, garnished with coffee beans. Our spin incorporates our exclusive Raw El Hanout essence – a North African spice blended into the cream.

When crafted with care, the Brandy Alexander is an amazing beverage. But where did it originate? Essentially, a fancier version of the Alexander cocktail, which has been largely forgotten, swaps gin for brandy and combines creme de cacao and cream for a velvety finish. This drink has a retro feel, but never goes out of style – even the toughest critics can’t resist its charm. We, of course, kick it up a notch by adding yellow chartreuse and aztec chocolate bitters to make this classic even more memorable – the cherry on top, so to speak!
