Our Story

We are proudly family-owned and operated, with Executive Chef James Van Dyke at the helm. James is supported by his wife Delphine and his in-laws, David and Elise, who have been long-time residents in Provo. And heading our service team is Edwin Ayala, a highly skilled mixologist with a charming personality. Edwin’s journey has taken him from the ciudads of Mexico to the mountains of Montana, and now he brings his expertise to Embers.

Passion is at the core of our team, dedicated to our craft and committed to making Embers the best restaurant in Turks and Caicos. We believe that delighting the senses and creating a five-star dining experience is an art form. We pay careful attention to every detail, from the aesthetics of our space to the meticulously crafted flavours and creations on offer. Our goal is to foster an environment that not only delights the senses but also arouses them, leaving a lasting impression.

Our Chef

Chef James developed a passion for cooking at the tender age of 13. He kick-started his culinary journey by working as a dishwasher at a popular local eatery located north of Seattle, Washington. Throughout his high school years, he honed his skills in the kitchen and eventually earned his chef’s hat after attending Le Cordon Bleu culinary school in Portland, Oregon. Climbing the ladder of success in urban kitchens, he gained valuable experience working at Michelin-starred restaurants in Chicago before venturing into the realm of luxury resorts in The Bahamas. During his time there, he successfully managed, launched, and expanded multiple dining establishments.

In 2017, James finally found his way to Turks and Caicos. It was in Provo that he met his wife, Delphine, while serving as the Executive Chef at a refined dining establishment in Grace Bay. Together, with the family, they embarked on the exciting journey of creating Embers.

Our History

In 1981, David and Elise arrived in Providenciales, Turks and Caicos, and like many tales of the ‘Provo old days’, their short stay in the islands became their permanent home. They raised their children, Delphine and Matthew, here in Provo, who both ventured abroad before eventually returning to their island home.

David always harboured a passion for owning his own bar, strumming his guitar and crooning with The Bar Band at various local venues over the years. When James joined the family, they hatched a plan to turn this dream into a reality. Their vision finally materialized in December 2023 with the establishment of Embers, a vibrant restaurant and cocktail bar in Grace Bay, known for its live fire cooking and expertly crafted cocktails.

Our goal for Embers is for all who walk through our doors to feel like family. A cool and casual ‘come as you are’ spot backed by welcoming staff, excellent food and delicious drinks. The space and menus are designed around the element of fire. The open kitchen dazzles, featuring a 20ft long butcher block and the star of the show, our Wildwoods custom live-fire grill. All elements are complimented with smoke infused cocktails and a boutique wine list.
